Ever had that mall, food court chicken that tastes great but you’re just not sure what the heck is in it that makes it so great? Well, now you can do all of that at home and use the BEST ingredients…particularly, that home-made honey you’re getting from your beekeeping! (If you need an Instant Pot, go here!)
What is “Bourbon Chicken”
It was created in New Orleans on the famous (or infamous) Bourbon Street. But that doesn’t mean you can only get good honey bourbon chicken in N.O.! Tons of Aisan resaurants (and particularly those mall vendors…yuck) are selling it. Note: It is not named after Bourbon in the recipe)

- Easy to prep and cook
- Total Time: 30 to 60 minutes
- Main Ingredients: Chicken things, honey, and ketchup
- 1 Small onion
- 1/2 cup of your honey
- 1/3 soy sauce or coco aminos
- 1/4 ketchup
- 1/4 bourbon whiskey (optional..but YUM!)
- 2 TBSP on vegetable oil (we use EVOO, though)
- 2 TSP minced garlic
- 1/8 TSP black pepper
- 1/8 (or more…to taste) of cayenne pepper
- 1 1/2 lbs of boneless, skinless chicken thighs
- 1 TBSP of cornstartch
- 1 TBSP of water

Mix the sauce and ingredients in your InstantPot
Place the chicken thighs in one layer in the sauce and turn a few times to coat.
Secure the lid, and make sure that the vent is closed.
Using the display panel select the MANUAL function*. Use the +/- keys and program the Instant Pot for 15 minutes.
When the time is up, let the pressure naturally release for 5 minutes, then quick-release the remaining pressure.
Remove chicken and dice.
Meanwhile, mix water and cornstarch in a small bowl, then add it to the sauce and cook 2-3 minutes until thickened.
Return chicken to pot and warm though. Serve over noodles or rice.
